To prepare tangerine cake, first preheat the oven to 180°C (350°F) and beat the egg whites with an electric mixer until stiff peaks form. In a separate bowl, mix the egg yolks, sugar, and tangerine zest. After adding the oil and tangerine juice, incorporate the sifted flour and baking powder. Finally, gently fold in the whipped egg whites. Pour the batter into a baking pan and bake for 45 minutes to 1 hour until fully cooked.


Step 1: Preparing the Oven and Eggs

To make a delicious tangerine cake, start by preheating the oven to 180°C (350°F). Separate the egg whites from the yolks, then beat the egg whites thoroughly with a mixer until they become firm and well-structured.


Step 2: Whipping the Egg Whites and Mixing the Yolks

The egg whites should be beaten until they are stiff enough that they do not fall out when the bowl is turned upside down. Place the whipped egg whites in the refrigerator. In the meantime, combine the egg yolks, sugar, and grated tangerine zest in a large bowl.


Step 3: Adding the Oil and Tangerine Juice

Continue mixing until the ingredients become creamy and light in color. Add the vegetable oil and mix for about 30 seconds until well combined. Then add the tangerine juice and mix for another 30 seconds.


Step 4: Mixing the Flour and Baking Powder

At this stage, set the mixer aside. Combine the flour and baking powder and sift them three times. Gradually add the flour mixture to the batter in three stages, gently folding it in with a spatula until fully incorporated.


Step 5: Adding the Egg Whites and Baking

Now add the whipped egg whites and gently fold them into the batter. Grease the cake pan with cake release spray or line it with parchment paper. Pour the batter into the pan and gently tap it a few times on the counter to remove air bubbles. Bake the cake until golden and fully cooked.
